Blueberry Overnight Oats

You only need 7 simple ingredients and 5 minutes of prep time to make these blueberry overnight oats! It's the perfect healthy breakfast to meal prep for the week.

Ingredients

  • ½ cup rolled oats old fashioned
  • ⅔ cup almond milk unsweetened
  • ¼ cup Greek yogurt full fat
  • ⅓ cup blueberries fresh or frozen
  • 1 teaspoon chia seeds
  • 2 teaspoons maple syrup
  • ½ teaspoon vanilla extract

Instructions

  1. Add oats, almond milk, yogurt, blueberries, chia seeds, maple syrup and vanilla into a bowl or mason jar. Stir well to combine. Seal the container with a lid and place in the fridge overnight.
  2. Take the container out of the fridge the next morning and stir the mixture. You'll notice that the oats soak up a lot of the liquid so you may want to add a little more almond milk before serving. Top with fresh blueberries or toppings of choice and enjoy!
