Blueberry Waffle Recipe

Ingredients

  • 1 cup fresh blueberries
  • 3 teaspoons baking powder
  • 2 tablespoons sugar
  • 2 cups flour
  • 1/2 teaspoon fine sea salt
  • 2 eggs , separated
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole milk
  • 1/4 cup unsalted butter , melted
  • powdered sugar
  • fresh blueberries
  • Whipped Cream

Instructions

  1. Separate eggs, beat egg whites until frothy and stiff.
  2. In a large mixing bowl, whisk together dry ingredients including baking powder, sugar, flour and fine sea salt.
  3. Next, whisk together egg yolks, vanilla extract, whole milk and melted unsalted butter. Slowly add to dry ingredients until just wet.
  4. Next, fold in egg whites and blueberries.
  5. Prep waffle iron with cooking spray and cook according to appliance directions. Typically about 4-5 minutes each.
  6. Top with powdered sugar, fresh blueberries and whipped cream.

Notes

  • If you just rinsed the blueberries, make sure they are dry before adding. They won’t stick to the batter and will add moisture to the batter making the waffles not get crispy on the edges.
