Borani
Borani is a traditional Iranian appetizer that is prepared with yogurt and spinach. It is also common in Persian Jewish cuisine and in Turkey.

Ingredients
- 2 lb fresh spinach , washed, stemmed and chopped
- 3 tablespoons olive oil
- 2 onions , chopped
- 2 cloves garlic , chopped
- 16 oz. Greek yogurt
- salt
- pepper
- 12 kernels walnut

Instructions
- In a large Dutch oven, heat the olive oil over medium heat and then add the onion. Brown gently until it becomes translucent.
- Add the garlic and mix well. Sauté for 1 minute.
- Add the spinach, mix well and sauté for 10 minutes, stirring regularly.
- When the spinach has warmed, transfer them to a bowl, add the yogurt, salt, pepper, and mix well.
- Place in the refrigerator until ready to serve and sprinkle with walnuts.
