Boursin Chicken

Boursin chicken features tender chicken breast smothered in a garlic herb sauce of Boursin cheese, white wine, and more. This chicken boursin recipe is a keeper.

Ingredients

  • 2 chicken breasts cut in half lengthwise
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon olive oil
  • ½ medium onion chopped
  • 1 teaspoon minced garlic 
  • ½ cup chicken broth
  • ½ cup dry white wine
  • 1 pkg (5.2 oz) Boursin cheese, room temperature
  • 1 tablespoon chopped parsley

Instructions

  1. Season the chicken with salt and pepper and heat the olive oil in a large saute pan. Cook the chicken for 4 minutes per side and move to a plate and keep warm.
  2. Cook the onion in the pan with the chicken drippings for 3 minutes, then add the garlic and continue cooking for an additional minute.
  3. Stir in the chicken broth and wine and simmer for 4 minutes.
  4. Add the Boursin cheese and stir until melted and the sauce is creamy.
  5. Add the chicken back into the pan and sprinkle with parsley.

  • Use a meat thermometer to check the chicken. The chicken is cooked when it reaches 165°. Do not overcook or the chicken will get dried out.
  • This is delicious served on its own or over potatoes or rice.
  • Make sure to taste your sauce as you cook so that you can adjust seasoning accordingly and make sure it's perfectly flavored every time.
  • Pound thick breasts to a uniform ½-inch thickness for even cooking.
  • Season the chicken before cooking it in the pan.
