Braised Short Ribs Recipe

Oven Braised Short Ribs in Red Wine Sauce are a classic recipe for flavorful, fall-off-the-bone tender beef ribs braised in wine and thyme.

Ingredients

  • 4 pounds short ribs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 2 tablespoons flour
  • 4 talks celery , thinly sliced
  • 2 carrot finely diced
  • 1 yellow onion , finely diced
  • 2 cups beef broth
  • 14.5 ounces crushed tomatoes
  • 1 cup red wine , Cabernet Sauvignon
  • 1 teaspoon thyme dried
  • 2 tablespoons water or more beef broth, cold
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 325 degrees.
  2. Season short ribs with salt and pepper and toss in flour.
  3. Add oil to a large Dutch oven (that you have a lid for) on high heat.
  4. Sear the short ribs on all sides, 4-5 minutes per batch.
  5. Remove the short ribs, reduce heat to medium, add in the celery, carrots, and onion.
  6. Cook, stirring occasionally, for 6-8 minutes or until translucent.
  7. Add in the beef broth, crushed tomatoes, wine, and thyme, stirring well.
  8. Add the short ribs into the pot, cover, and cook for 2 1/2 to 3 hours until fork-tender.
  9. Remove the short ribs from the pot carefully.
  10. Remove liquid from the pot, strain out the fat.
  11. Add liquid back to the pot.
  12. Using an immersion blender blend the liquid and cooked vegetables until smooth.
  13. Add short ribs back to the pot and cook for 5-6 minutes until short ribs are warmed.
