Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 2/3 cup brown sugar , packed
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees and line a muffin tin with cupcake liners.
  2. In a large bowl whisk the wheat bran and buttermilk and let sit for 10 minutes.
  3. Add in vegetable oil, egg, brown sugar, and vanilla extract and whisk well until combined.
  4. Sift together flour, baking soda, baking powder and salt.
  5. Whisk in until just combined.
  6. Scoop into the muffin tin and bake for 18-20 minutes or until a toothpick comes out clean.
