Brazilian Pumpkin Compote with Coconut - Doce de Abóbora com Coco

This Brazilian Pumpkin compote with coconut — doce de abóbora com coco — is thick, spreadable and textured with delicate bits of pumpkin and coconut. Spiced just right, it's rich and spoonable. Spread it on toast, pair with a variety of cheeses, or enjoy it the classic Brazilian way: straight from the jar by the spoonful!

Ingredients

  • 2 pounds of pumpkin* peeled, seeded and diced
  • 1 cup of light brown sugar
  • 4 whole cloves
  • 2 cinnamon sticks
  • 1/2 teaspoon of vanilla bean paste or 1 teaspoon vanilla extract
  • 1 cup unsweetened, shredded coconut
  • 1 teaspoon of freshly squeezed lime juice
  • A pinch of kosher salt

Instructions

  1. Add all ingredients except the coconut to a medium-large Dutch oven or heavy-bottomed pot, and stir to combine.
  2. Cover the pot, and cook over medium-high heat, stirring occasionally, for 20-30 minutes or until the pumpkin is soft enough to mash with the back of a spoon.
  3. Once soft, uncover the pot, and cook for an additional 20 minutes, or until the water from the pumpkin has evaporated. This is extremely important. Otherwise, the texture will be too soggy.
  4. Add the shredded coconut and cook for another 3-5 minutes. If using fresh coconut, cook slightly longer to prevent spoilage.
  5. Once beautiful and thickened, transfer to mason jars or airtight containers and allow it to cool completely before sealing and refrigerating.
  6. Serve warm or cold, by itself or with cheese.

Notes

  • *Picking the perfect pumpkin: Go for naturally sweet options like butternut squash, kabocha squash, or sugar pumpkin. These varieties hold up well to cooking and provide a richer flavor. Avoid waterier pumpkins like carving pumpkins, as they lack sweetness and can become too mushy. Canned pumpkin puree is not recommended.
