Breakfast Burrito

This breakfast burrito recipe is loaded with eggs, sausage, beans, cheese and pico de gallo, all wrapped up in a warm flour tortilla. A quick and easy breakfast option that takes just minutes to put together.

Ingredients

  • 1 tablespoon butter
  • 1 package fully cooked breakfast sausage links diced
  • 6 eggs beaten
  • salt and pepper to taste
  • 3/4 cup shredded cheese I use cheddar
  • 1 cup refried beans warmed
  • 1/2 cup Pico de Gallo
  • 6 flour tortillas warmed, burrito size

Instructions

  1. Melt the butter in a large pan over medium heat. 
  2. Add the eggs to the pan and cook for 2 minutes, stirring occasionally to scramble the eggs. Season the eggs with salt and pepper. Move the eggs to one side of the pan.
  3. Place the sausage on the other side of the pan.
  4. Cook for 5 minutes, stirring the eggs occasionally, until eggs are cooked and sausage is browned.
  5. Lay the tortillas out on a flat surface. Divide the beans equally among the tortillas and spread out over the center of each tortilla.
  6. Layer the eggs, sausage, cheese and pico de gallo over each tortilla.
  7. Fold one half of the tortilla over the filling and roll tightly, tucking the ends of the tortilla in as you roll.
  8. Serve immediately, or refrigerate or freeze for later use.

Notes

  • As you cook your eggs, cut the eggs into small chunks that you can later place in your tortillas.
  • Warm your refried beans before you use them. You can warm them in a microwave safe container in your microwave on high for 1 minute.
  • Layer your ingredients in the middle of your tortillas in a long oval shape. Make sure to leave some room on the ends to fold your tortillas.
