Breakfast Burrito
This breakfast burrito is practically guaranteed to keep you full until lunchtime!
Ingredients
- 4 tortilla large
- 8 egg large
- 1/2 cup black beans drained and rinsed
- 1 cup cheddar cheese shredded
- 1/2 cup bell pepper diced
- 1/2 cup onion diced
- 1/2 cup spinach chopped
- 1 tablespoon olive oil
- salt to taste
- black pepper to taste
- salsa optional, or hot sauce for serving
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the bell peppers and onions, sautéing until softened, about 3-4 minutes.
- In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the vegetables and scramble until just set.
- Warm the tortillas in a separate skillet or microwave until pliable.
- Divide the scrambled eggs evenly among the tortillas, placing them in a line down the center of each tortilla.
- Top the eggs with black beans, shredded cheese, and chopped spinach.
- Fold in the sides of each tortilla and roll up tightly to form the burritos.
- Serve immediately with salsa or hot sauce if desired.
