Breakfast Burrito

Start your day with a breakfast burrito. They are also great for meal prep and can be frozen.

Ingredients

  • 6 egg
  • ½ cup milk
  • ½ cup green bell pepper chopped
  • ½ cup red bell pepper chopped
  • ½ cup yellow onion diced
  • 4 flour tortilla large
  • ½ cup pepper jack cheese shredded
  • ½ cup colby cheese shredded
  • 6 lices Bacon cooked and chopped into small pieces (I use turkey bacon)
  • salt to taste
  • black pepper to taste

Instructions

  1. In a medium bowl, whisk the eggs and milk until well beaten.
  2. Stir in the peppers and onion.
  3. Heat a large skillet over medium heat and grease skillet with butter or coconut oil. Pour egg mixture into skillet and scramble the eggs until fully cooked.
  4. In another large nonstick skillet over medium-low heat, place tortilla on the bottom of the pan to warm. Sprinkle cheese over tortilla and heat until cheese is fully melted, being careful not to burn tortilla.
  5. Remove warm tortilla from pan and place on work surface. Top with bacon and egg mixture. Sprinkle with salt and pepper.
  6. Fold the bottom edge of the wrap up. Fold the sides of the wrap inward and then roll the wrap up tightly to enclose all of the fillings. Enjoy!

  • STORAGE
  • To freeze, wrap each burrito in plastic wrap and then in foil. Then, place burritos in a freezer safe zip lock bag. To reheat in the microwave, remove the plastic wrap and foil. Then wrap in a paper towel and place in the microwave for 1 to 2 minutes, until heated through. 
  • Cheese: You can also substitute with any of your other favorite cheeses, such as cheddar, swiss, feta or goat cheese.
  • Bacon: You can use any type of bacon. You can also use cooked ground breakfast sausage instead of the bacon, if desired.
