Ingredients

  • 4 large tortillas
  • 8 large eggs
  • 1/2 cup black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup chopped spinach
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • Salsa or hot sauce for serving optional

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the bell peppers and onions, sautéing until softened, about 3-4 minutes.
  2. In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the vegetables and scramble until just set.
  3. Warm the tortillas in a separate skillet or microwave until pliable.
  4. Divide the scrambled eggs evenly among the tortillas, placing them in a line down the center of each tortilla.
  5. Top the eggs with black beans, shredded cheese, and chopped spinach.
  6. Fold in the sides of each tortilla and roll up tightly to form the burritos.
  7. Serve immediately with salsa or hot sauce if desired.
