Breakfast Cookies

Filled with oats, peanut butter, banana and more, these Breakfast Cookies are a delicious option for a healthy breakfast or on-the-go snack!

Ingredients

  • 1 ¼ cups quick oats
  • 1 ¼ cups old fashioned oats
  • 3/4 cup peanut butter creamy
  • 1 medium banana 1/2 cup mashed banana, mashed
  • 1/4 cup applesauce unsweetened
  • 2 Tablespoons flaxseed meal
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 coop protein powder this can be optional, vanilla
  • 1/2 cup chocolate chips I like to use white chocolate chips, any kind
  • 1/2 cup craisins optional

Instructions

  1. Heat oven to 350 degrees F. Line a large baking sheet with parchment paper. Combine the first 9 ingredients in a large mixing bowl. Stir well to combine.Stir in chocolate chips and/or craisins, if using.
  2. Using a large cookie scoop (#20 scoop), drop dough onto prepared baking sheet. You should get 10 large cookies.Shape and flatten cookies to your liking. They will not change shape during baking.
  3. Bake 15 minutes. Remove from oven and let cool before serving.
