Ingredients
- 1 pound ground breakfast sausage
- 6 large eggs
- 2 tablespoons salted butter melted
- 1 ¾ cups all-purpose flour
- 2 teaspoons baking powder
- 1 7 ounce can diced green chilis
- 1 ½ cups sharp cheddar cheese
Instructions
- Preheat your oven to 400°F.
- Heat a nonstick pan over medium heat for a few minutes. Once the pan is hot, add your ground sausage. Had a spatula to break up the sausage as it cooks for about 5 minutes, or until no longer pink in the middle. Remove the pan from the burner and let the sausage cool down for 10 minutes.
- Add the ground sausage to a large mixing bowl along with the eggs and melted butter. Whisk vigorously to beat the eggs.
- Add the flour and baking powder to the bowl. Whisk until no pockets of dry flour remain unincorporated.
- Gently fold in the shredded cheese and diced green chilis until they are evenly distributed throughout your batter.
- Use a cookie scoop or large spoon to drop 12 large balls of biscuit batter onto a baking sheet and bake for 10 minutes.
- Serve and enjoy!

- Store these egg bites in a plastic bag or airtight container for up to 4 days in the refrigerator. They are easily reheated in the microwave for a quick breakfast!
- Be careful not to overbake them so they don’t become dry, tough, or even burned! Once the middle is set, they are done.
- Feel free to omit the diced green chiles if you prefer. If you are concerned about spice, you can try mild chiles.
