Breakfast Egg Bites with Sausage

These Sausage Egg Bites provide a balanced breakfast in a small and portable package! It’s a quick, easy, and flavorful recipe that the whole family will love.

Ingredients

  • 1 pound ground breakfast sausage
  • 6 large eggs
  • 2 tablespoons salted butter melted
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 7 ounce can diced green chilis
  • 1 ½ cups sharp cheddar cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Heat a nonstick pan over medium heat for a few minutes. Once the pan is hot, add your ground sausage. Had a spatula to break up the sausage as it cooks for about 5 minutes, or until no longer pink in the middle. Remove the pan from the burner and let the sausage cool down for 10 minutes.
  3. Add the ground sausage to a large mixing bowl along with the eggs and melted butter. Whisk vigorously to beat the eggs.
  4. Add the flour and baking powder to the bowl. Whisk until no pockets of dry flour remain unincorporated.
  5. Gently fold in the shredded cheese and diced green chilis until they are evenly distributed throughout your batter.
  6. Use a cookie scoop or large spoon to drop 12 large balls of biscuit batter onto a baking sheet and bake for 10 minutes.
  7. Serve and enjoy!

Notes

  • Store these egg bites in a plastic bag or airtight container for up to 4 days in the refrigerator. They are easily reheated in the microwave for a quick breakfast!
  • Be careful not to overbake them so they don’t become dry, tough, or even burned! Once the middle is set, they are done.
  • Feel free to omit the diced green chiles if you prefer. If you are concerned about spice, you can try mild chiles.
