Breakfast Pitas with Chicken Sausage

Ingredients

  • 2 pita bread
  • 1 tablespoon olive oil
  • 4 lices mozzarella cheese
  • 1 package chicken breakfast sausage patties brand: Jones Dairy Farm All Natural Golden Brown
  • 2 egg large
  • salt
  • black pepper
  • 3/4 cup arugula
  • 1 avocado medium sized
  • 1 lemon

Instructions

  1. Heat up the grill pan over medium high heat. Brush each side of the 2 pita breads with 1 tablespoon olive oil. Grill each side of the pita bread 1-2 minutes or until slightly crisp. Remove from the grill and allow to slightly cool.
  2. Divide 4 slices mozzarella cheeseon each pita. Prepare the 1 package Jones Dairy Farm All Natural Golden Brown Chicken Breakfast Sausage Patties in the microwave according to package directions. Place 2 sausages on top of each slice of mozzarella cheese.
  3. In a large skillet over medium high heat, crack 2 large eggs directly into the pan and cook until the egg whites are set, about 2-3 minutes.
  4. Place one egg on top of the chicken sausages on each pita. Divide 3/4 cup arugula evenly between the two pitas. Slice 1 medium sized avocado and squeeze 1 lemon over the avocado. Place the avocado over the arugula and season with a pinch of salt and pepper.
