Breakfast Potatoes

Crispy and flavor-packed potatoes with onions, and bell peppers. These are the best side dish to start your day with!

Ingredients

  • russet potato cut into cubes, bag (5 pounds); or red potato
  • onion diced, small, yellow
  • garlic 3 cloves, minced
  • green bell pepper seeded then diced, 1 to 2
  • red bell pepper seeded then diced, 1 to 2
  • vegetable oil
  • butter melted
  • seasoned salt
  • onion powder ¼ teaspoon
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 425 degrees F. In a very large bowl (or two large bowls) add the cubed potatoes, onion, garlic, bell peppers, oil, butter, seasoned salt, onion powder, salt and pepper. Toss well to combine ingredients.
  2. Divide mixture evenly among two large rimmed baking sheets. Spread potatoes out into one even layer. Bake for 20 to 25 minutes. (Stir halfway through the baking time, so that everything cooks evenly.)
  3. Now, raise the heat to 500 Degrees F. Bake potatoes for another 12 to 15 minutes, or until potatoes are golden brown and crispy. *Make sure to keep an eye on them so that they don’t burn! Season again with a little more salt and pepper. Serve warm and enjoy!
