Breakfast Quesadillas (Bacon, Egg & Cheese)

Amazingly easy to make and delicious to eat, start your day off with Breakfast Quesadillas and feed your family too!

Ingredients

  • 8 lices Bacon
  • 8 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • Pinch salt
  • Pinch of pepper
  • 8 flour tortillas I use burrito sized; they are around 10 inches across
  • 1 cup pepper jack cheese shredded

Instructions

Cook the bacon

  1. In a large skillet, cook the bacon until crispy. Slice or crumble when cooked.
Scramble the eggs
  1. Whisk together the eggs and milk.
  2. Melt the butter in a skillet over medium low heat and pour in the whisked eggs. Cook the eggs, stirring gently until soft and fluffy, season with salt and pepper.
Make the quesadillas
  1. Heat a large frying pan or skillet over medium-high heat. Spray with nonstick cooking spray, a little olive oil or butter (you'll need around a tablespoon of butter to cook all the quesadillas)
  2. Working quickly, place a tortilla in the skillet and add a sprinkle of cheese, add the eggs and bacon, and top with cheese. Place another tortilla on top and cook until the cheese becomes melted. Press down lightly so the tortilla on top sticks to the filling.
  3. Flip carefully and cook on the other side until golden brown.
Serve
  1. Slice and serve with sour cream, pico de gallo and guacamole.
