Breakfast Tacos Recipe
Breakfast Tacos are made with mini tortillas filled with fluffy scrambled eggs, melted cheddar cheese, crispy oven-baked bacon halves, and cubed hash browns. The eggs are cooked gently to retain moisture and combined with cheese. The dish offers a mix of textures and savory flavors, assembled quickly for a hearty morning meal.
Ingredients
- 8 mini tortillas
- 8 egg
- 1 cup cheddar cheese shredded
- 4 pieces Bacon halved
- 2 cups hash browns cubed
Instructions
- Scramble eggs over medium-low heat. Add cheese, salt, and pepper (plus peppers if wanted).
- Cook up hashbrowns and bacon separately.
- Cook bacon by preheating the oven to 400°F. Line a rimmed baking sheet with tin foil (optional, but allows for easy cleanup), and layout as many bacon slices as you want on the sheet.
- Bake in the oven for 18-20 minutes or until it's cooked to your liking. It will cook perfectly on both sides, no need to flip.
- To make tacos, add eggs, a scoop of hashbrowns, and a half-piece of bacon. Sprinkle with cilantro and serve with salsa.
