Brie Crostini with Prosciutto

Ingredients

  • 1/2 of a baguette cut into 12 (1/2 inch thick) diagonal slices
  • 1/2 cup apricot jam
  • 2 ounces prosciutto each slice cut into thirds
  • 12 lices Brie cheese cut approximately 1/4 inch thick
  • Honey for drizzling on top

Instructions

  1. Preheat oven to 375° F. And line a baking sheet with parchment paper. Place the cut pieces of prosciutto on the baking sheet, and bake for about 10 minutes or until crisp.
  2. While the prosciutto bakes, spread approximately 1-2 teaspoons of the apricot jam onto each slice of baguette and place them on a baking sheet. Top with a slice of brie cheese.
  3. Remove the prosciutto from the oven and put the crostini in. Bake for 6-8 minutes or until the brie is melted. Remove from the oven and place 1 or 2 pieces of the crispy prosciutto on top of the brie. Drizzle with honey and serve.
