Brie Grilled Cheese with Apples

Ingredients

  • 2 tablespoons slivered almonds toasted
  • 2/3 cup apples, diced (I like Fuji)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 4 ounces brie cheese, sliced
  • 4 lices sourdough bread (or gluten-free bread if needed)
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 400 degrees, and spread the slivered almonds on a small baking sheet. Bake them until lightly browned, about 4 to 5 minutes.
  2. Mix the toasted almonds, diced apples, maple syrup, ginger, and cinnamon together in a small bowl.
  3. Divide the Brie slices between all 4 pieces of bread.
  4. Melt the 2 tablespoons of butter in a large pan over medium heat.
  5. Once the butter is melted, place 2 slices of bread into the pan, cheese side up.
  6. Quickly divide the apple and almond mixture between both pieces of bread, and top with the remaining slices of bread, cheese-side down.
  7. Cook until golden brown, about 1 to 2 minutes, and then flip and repeat on the other side.
