Brioche French Toast Casserole
This Brioche French Toast Casserole makes an easy breakfast that can be prepared ahead and baked right before serving. It is custardy and mildly sweet, with layers of cream cheese and berries. If you’re looking for a breakfast casserole to please the entire family on the weekends or for the holidays, then this is for you!

Ingredients
For the casserole:
- 16 oz Brioche Loaf cut into 1-inch cubes
- 12 oz cream cheese softened (or 1 ½ packages)
- ½ cup sugar
- 4 ¼ cups heavy whipping cream divided
- 2 cups mixed berries fresh or frozen
- 10 large eggs
- ⅔ cup sugar
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
For the berry sauce:
- 2 cups mixed berries fresh or frozen
- 2 tablespoon sugar
- 1 ½ teaspoon cornstarch
Instructions
- Preheat oven to 350 degrees F (180 degrees C). Grease a 9x13-inch baking dish with nonstick cooking spray. Set aside!
- Cut bread into 1-inch cubes and place half into the bottom of the pan.
- In the bowl of a mixer, mix cream cheese, ½ cup of sugar, and 2 ¼ cups of heavy cream until homogeneous and creamy. Spoon half of the cream cheese mixture on top of the bread in dollops and spread. Sprinkle on 1 cup of berries. Top with the remaining bread, cream cheese mixture, and 1 cup of berries.
- In a separate bowl, make the custard: Add eggs, 2 cups heavy cream, ⅔ cups sugar, vanilla, and cinnamon. Beat well until well mixed (about 1 minute). Pour egg mixture over bread/cream cheese/berries.
- Make sure to use a spoon to push some of the custard below the top layer of the casserole. Cover with foil and let sit in the fridge for at least 30 minutes or overnight.
- Bake, covered with foil, for 30 minutes. Then remove foil and discard.
- Continue to bake the brioche French toast casserole for 20-25 minutes, or until the top is set and jiggly.
- Remove from the oven and let stand while you make the berry sauce. To do this mix mixed berries, sugar, and cornstarch in a microwave-safe bowl until the mixture is homogeneous. Cook on high for 2 minutes, then mix. If the sauce is not thick, cook for an additional 2 minutes. It should be saucy yet thickened.
- Spoon sauce over the baked French toast casserole and enjoy!

Notes
- Can You Freeze French Toast Casserole?
- I don’t recommend it! The custard will break apart and the cream cheese mixture may turn gritty.
- Storage
- You can prepare this casserole one day ahead, cover it, and store it in the fridge to bake the next morning. Leftovers keep well in the fridge for up to 3 days.
