Brioche French Toast Casserole

Brioche French Toast Casserole with banana and cashews makes a delicious, hearty, and easy breakfast treat!

Ingredients

  • 10 brioche rolls cut into bite-sized pieces
  • 5 eggs large
  • 3 cups (xxg) milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg ground
  • 1 pinch salt
  • 4 bananas
  • ¼ cup (xxg) cashews
  • 2 tablespoons maple syrup
  • 1 tablespoon brown sugar

Instructions

  1. Lightly oil a 9x13 baking dish and spread the brioche pieces evenly across the prepared dish.
  2. Whisk together the eggs, milk, vanilla, nutmeg, and salt and pour over the brioche.
  3. Cover and allow to rest until bread has absorbed the milk mixture for 30 minutes. You can keep this for up to a day in the fridge.
  4. Preheat the oven to 350 degrees F / 180 degrees C and bake the casserole for 35 minutes.
  5. Just before the 35 minutes are up, peel and slice the bananas and add them to a bowl. Mix them with the cashew nuts and maple syrup.
  6. Remove the brioche casserole from the oven, and sprinkle on the maple-coated banana slices and cashews before topping with brown sugar.
  7. Return to the oven and bake for an additional 10 minutes, or until the bananas and cashews are caramelized.

Notes

  • Keep in mind that if you've chilled the dish overnight, it's best to allow it to reach room temperature before baking. Also, note that the casserole may puff up in the oven but will settle after resting for a few minutes. Sprinkle with a dusting of powdered sugar just before serving. Storage - keep leftovers in an airtight container inside the fridge for up to 4 days.
