Broccoli Cauliflower Casserole

This Broccoli Cauliflower Casserole combines florets of broccoli and cauliflower with a creamy cheese sauce made from cream cheese, heavy cream, Dijon mustard, and shredded white cheddar and mozzarella. The mixture is baked until bubbly and topped with melted cheddar that forms a golden crust. The result is a rich, comforting vegetable casserole suitable as a side or main dish.

Ingredients

  • 3 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 tablespoon unsalted butter or ghee
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 6 ounces cream cheese cubed, at room temperature
  • 1/3 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper ground
  • 8 ounces White Cheddar Cheese divided, shredded
  • 3 ounces mozzarella cheese

Instructions

  1. Preheat oven to 400 degrees F. Butter an 8x8 casserole dish and set aside.
  2. Bring a large pot of water to a rolling boil; add the broccoli and cauliflower and blanch for 1 minute, then drain well.
  3. Melt butter in a deep skillet over medium heat. Saute onion 3-4 minutes, then add the garlic.
  4. Stir in the cream cheese until melted, and then stir in the heavy cream, mustard, salt, pepper, half of the cheddar, and the mozzarella. Once the cheese is melted, stir in the broccoli & cauliflower.
  5. Pour the contents into the prepared dish and top with the remaining cheddar. Bake uncovered 20-25 minutes, until cheese is bubbling and golden.

Notes

  • All broccoli or all cauliflower can be used instead of a mix.
  • Substitute cream cheese with mascarpone or cottage cheese, though texture and flavor will change.
  • Heavy cream can be replaced with whole milk if necessary.
  • Store leftovers covered in the refrigerator for up to 3 days.
  • Freeze the uncooked casserole tightly wrapped for up to 3 months; bake at 400°F for 30-35 minutes when frozen.
  • Reheat covered at 350°F for 20-25 minutes until heated through.
