Broccoli Cheddar Soup (Crazy Easy)

This broccoli cheddar soup is loaded with tender broccoli, sharp cheddar cheese, and a delicious broth. It's oh-so-creamy and comforting — bring on the seconds!

Ingredients

  • 4 tbsp unsalted butter
  • 1 medium onion finely chopped
  • 1 large carrot chopped
  • 3 garlic cloves minced
  • 1/4 cup all purpose flour
  • 3 cups low sodium chicken broth
  • 2 cups Half & Half
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 4 cups broccoli chopped
  • 8 oz sharp cheddar cheese freshly grated

  1. In a Dutch oven or large soup pot, melt the butter over medium heat. Add the onions, carrots, and garlic and sauté for 5-8 minutes until softened.
  2. Add the flour and cook a few minutes, mixing until well incorporated.
  3. Gradually whisk in the broth, then stir in the half & half and season. Bring the soup to a simmer while stirring.
  4. Add the broccoli. Cook for about 10-15 minutes on low heat until tender, stirring often to prevent the bottom of your pot from scorching.
  5. Turn off the heat and mix in the cheese until smoothly melted. If needed, add salt and pepper to taste. Enjoy!
