Broccoli Salad Keto Recipe

Ingredients
Broccoli Salad
- 1/2-1 pound Bacon cooked until crispy and dice
- 8 cups broccoli about 2-3 heads of broccoli, chopped
- ½ cup red onion about ½ of a red onion, diced
- 1 cup cheddar cheese shredded, sharp
Broccoli Salad Dressing
- 1 cup mayonnaise
- 1/4 cup sweetener confectioners style
- 2 tsp. white vinegar
- black pepper to taste
- salt to taste
Instructions
Broccoli Salad Dressing
- In a small mixing bowl whisk together mayonnaise, sweetener, vinegar, salt and pepper.
- Place in the refrigerator until ready to dress the salad.
Broccoli Salad
- Cook bacon, cool, and dice into small pieces.
- Clean broccoli crowns and chop into bite size pieces.
- Dice onion into small pieces.
- Shred cheese.
- Place broccoli, bacon, onion, and cheese in a large bowl. Mix ingredients together.
- Add prepared dressing and fold into broccoli salad.
- Add additional ingredients, 1/4 cup each of nuts or dried fruit (optional).
- Refrigerate until ready to serve.
Notes
- Use ½ pound of bacon if you add ¼ cup each of nuts and dried fruit to keep balance in the salad.
