- 1 lbs salmon, skin on (or 4 fillets around 115 grams each)
- 1 tsp lime zest
- 1 tsp olive oil
- 1 small shallot, finely chopped
- 1 cup couscous (small quick cooking couscous, not Israeli Couscous)
- 1 1/2 cups vegetable or chicken broth
- 2 tbsp chopped cilantro
- 1/2 pint cherry tomatoes, halved
- 1/2 long English cucumber, sliced and cut into quarters
- 1/2 large red bell pepper, thinly sliced
- 1/4 small red onion, finely chopped
- 1 drizzle red wine vinegar
- 1 drizzle olive oil
- 1/8 tsp dried oregano
- 1/4 tsp fine sea salt
- 1/4 tsp ground black pepper
