Brown Butter Cinnamon Swirl Banana Bread

Ingredients

  • 1/2 cup (4 ounces) unsalted butter, melted until browned
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup sour cream (Full-fat works best)
  • 3 medium VERY RIPE bananas, smashed
For the Cinnamon Swirl:
  • 1/4 cup sugar
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons cinnamon

  1. Preheat oven to 350 degrees (F) (175 degrees C).
  2. Generously grease a 9x5 inch loaf pan with butter or non-stick spray; set aside.
  3. In a large bowl, whisk together the melted butter and sugars, beat until combined. Add the eggs and vanilla, mix well.
  4. In a separate bowl combine the flour, baking soda and salt; stir into the butter mixture until smooth. Fold in the sour cream and mashed bananas; don;t over mix.
  5. Spread half of the batter into the prepared pan. In a small bowl combine the ingredients for the cinnamon swirl, then sprinkle half of it over the batter. Add the remaining batter to the pan, and top with remaining cinnamon sugar.
  6. Bake for about 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely. Cut into slices and serve.
