Ingredients

  • 1/2 cup butter browned
  • 1 cup light brown sugar packed
  • 2 egg large, at room temperature
  • 1 vanilla extract pure, 1/2 teaspoon
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree
  • 2 banana medium, very ripe and mashed
  • 1/4 cup sour cream

  1. Preheat oven to 350 degrees (F). Generously grease a 9x5 inch loaf pan, set aside.
  2. In a large bowl, whisk together the browned butter and sugar, beating until well combined. Add the eggs and vanilla, and mix well. Add in the flour, baking soda, salt, and pumpkin pie spice and stir until just combined. Fold in the pumpkin puree, mashed bananas, and sour cream. Spread the batter evenly into the prepared pan.
  3. Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
