Ingredients

  • ½ cup packed brown sugar
  • ¼ cup maple syrup (or honey)

  1. Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare potatoes: Wash and dry the potatoes. Cut them into quarters or halves if they are large.
  3. Season potatoes: In a large bowl, toss the potatoes with olive oil, salt, and pepper.
  4. Roast potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast for 30-40 minutes, or until they are tender and slightly crispy on the outside.
  5. Make the glaze: While the potatoes are roasting, melt the butter in a medium saucepan over medium heat. Add the brown sugar, maple syrup (or honey), apple cider vinegar, cinnamon, and nutmeg. Stir well and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until the glaze thickens slightly.
  6. Glaze potatoes: Once the potatoes are roasted, transfer them to the saucepan with the brown sugar glaze. Toss to coat the potatoes evenly.
  7. Serve: Serve the brown sugar glazed potatoes hot.

Notes

  • Potatoes: You can use any type of small potato for this recipe. Yukon Gold or red potatoes work well because they hold their shape during roasting.
