Brownie Truffles

These four ingredient, easy no bake brownie truffles are made with brownie mix, and are super fudgy. Brownie balls are a rich, gooey treat that's perfect for when you have a sweet tooth or a party!

Ingredients

  • 19 ounces brownie mix You need an 18 or 19 ounce mix made for a 13x9 inch pan
  • 2 tablespoons chocolate syrup
  • 2 tablespoon corn syrup
  • ¼ cup water
  • 1 cup Sprinkles

Instructions

  1. Line a baking sheet with parchment paper.
  2. Place brownie mix in a large microwave safe bowl. Heat brownie mix in the microwave for thirty seconds, then stir. Repeat for 1 1/2 to 2 minutes or until the mixture reaches 160 degrees. (Use a thermometer to check) This ensures our flour is safe to consume as raw flour without being heated should not be eaten.
  3. Add corn syrup, chocolate syrup and water to the warm brownie mix. Stir the brownie mixture well until smooth.
  4. Place sprinkles in a shallow dish with a small bowl of water nearby. Wet your hands to keep the truffle from sticking to your hands, then scoop out a tablespoon of the brownie mixture. Roll the truffle into a ball, then roll in sprinkles and place on parchment paper on a baking sheet so they are not touching. Repeat until all truffles have been rolled.
  5. Chill for at least one hour in the refrigerator, then serve cold!

Notes

  • Uncooked flour can sometimes carry bacteria that can cause illness. While this tends to be pretty rare, heating the brownie mix before we make the brownie truffles ensures our treats are safe to eat so don't skip that step!
  • It's easiest to use a small cookie scoop for portioning the brownie truffles if you have one.
  • Keep a bowl of water next to you when you are rolling the truffles for your hands and apply as needed. This helps the brownie bites from becoming too sticky.
  • Store truffles in the refrigerator in an airtight container until you are ready to eat. This dessert is best served chilled. If you need to double layer, add a sheet of parchment paper, wax paper or freezer paper in between the layers.
