Brunch Pasta with Bacon and Egg

Salty, smokey bacon stirred through buttered pasta and dressed with a soft egg. The yolk oozes over the pasta and creates a fabulous additional sauce. This Brunch pasta dish is simple to make, delicious to eat and costs pennies to make! Winner!!!

Ingredients

  • 5 oz Bacon
  • ½ onion
  • 2  teaspoon olive oil
  • 5 oz short pasta
  • 1 teaspoon butter
  • 1 tablespoon vegetable oil
  • 2 eggs
  • finely chopped parsley

Instructions

  1. Dice the bacon and set aside.
  2. Peel and finely dice the onion.
  3. Place the bacon into a cold skillet with the oil and set it over a medium heat.
  4. Meanwhile bring a large pot of water to the boil. Add a generous pinch of salt and cook pasta for a minute less than the packet suggest.
  5. Whilst the pasta is cooking give the bacon a stir, it should be starting to crisp slightly. Add in the onion and season the mixture with salt and pepper.
  6. Cook for a further 5 minutes until the onion is translucent and soft.
  7. Remove from the heat and add the butter.
  8. Reserve a cup of the pasta cooking water then drain the pasta.
  9. Tip the bacon mixture along with ¼ cup of the water into the pasta pan, add the pasta and set over a low heat and stir well.
  10. Pour the vegetable oil into the skillet and fry the eggs until the white is set but the yolk is still soft and oozy.
  11. Stir the pasta again, adding more water if needed.
  12. Serve the pasta in large bowls with an egg on top and a final garnish of parsley.
