Bubur Sumsum  (Sweet Indonesian Coconut Porridge)

Bubur Sumsum is a vegan Indonesian Coconut Porridge that marries the creaminess of coconut milk with dark mineral-rich palm sugar syrup. You can add sweet potato dumplings known as biji salak to make it gorgeous, healthier, and yes, MORE FUN!

Ingredients

  • 13.5 ounces coconut milk (400 ml.) canned
  • ½ teaspoon vanilla extract
  • 1 tablespoon palm sugar
  • ¼ teaspoon salt
  • 3 pandan leaves knotted
  • ⅓ cup glutinous rice flour
Palm sugar syrup:
  • ½ cup palm sugar or coconut sugar
  • ¼ cup water
  • 12-16 biji salak optional
  • Extra coconut milk optional

Instructions

  1. In a saucepan over low heat, warm the coconut milk, vanilla extract, palm sugar, salt and pandan leaves. Cook for 4 minutes until just simmering, then remove the pandan leaves.
  2. Whisk the rice flour into the cooking coconut milk. Continue to cook for 3-4 minutes until thickened and bubbling.
  3. In a separate small saucepan over high heat, whisk together the palm sugar and water. Cook and stir for 2-3 minutes until the sugar dissolves, creating a dark palm sugar syrup.
  4. Portion the rice porridge into 4 separate bowls, optionally placing 3-4 biji salak in each, and drizzle with the palm sugar syrup, and optionally an extra drizzle of coconut milk.

Notes

  • Silky Rice Flour Blend:
  • When crafting the rice flour porridge, prioritize achieving a silky, lump-free texture. To prevent clumps, gradually add the rice flour to the simmering coconut milk while continually whisking, guaranteeing a smooth porridge.
  • Careful Heat Management:
  • Vigorous boiling may lead to undesirable curdling or separation of the coconut milk. Opt for a slow and steady heat approach to preserve the creamy texture and prevent any unsightly oiliness from fat separation.
  • Dumpling Timing:
  • If you add biji salak, warm them gently first if you have made them in advance with a quick blanch in boiling water.
