Ingredients

  • 3 tbsp butter
  • 2 tbsp olive oil
  • 2-3 tsp ground black pepper
  • 1½ cups grated Parmesan cheese
  • 500 g (1lb) bucatini pasta
  • salt to taste

Instructions

  1. Bring a large pot of water to a boil and season generously with salt.
  2. Add the pasta and cook until al dente - 8-10 minutes.
  3. Reserve 1 cup of pasta cooking water and drain the pasta.
  4. In a large skillet or frying pan set over medium-low heat, melt the butter and oil together.
  5. Add the freshly ground pepper and cook for 1-2 minutes until fragrant.
  6. Add the drained pasta and a splash of the reserved pasta water along with the grated cheese.
  7. Toss well with tongs until the cheese melts and stir in more pasta water to create a creamy sauce.
  8. Season with salt to taste and serve with a generous grating of Parmesan.
