Buckeye Candy

Ingredients

Peanut butter balls
  • 1 ¼ cup creamy peanut butter
  • ¼ cup butter* + 1 tablespoon , softened
  • ¾ teaspoon vanilla extract
  • ⅛ teaspoon fine sea salt
  • 3 cups powdered sugar
Chocolate coating
  • 1 cup semi-sweet chocolate chips
  • ½ tablespoon butter

Instructions

  1. Add the peanut butter, butter, vanilla, and salt to a medium mixing bowl. Using an electric mixer, mix on high until creamed. Slowly add the powdered sugar while continuing to mix until all powdered sugar is gone.
  2. Using a measuring spoon or cookie scoop, shape 1-tablespoon balls with your hands. Once rolled, place them on a parchment-lined baking sheet and chill in the freezer for 20-30 minutes.
  3. In the meantime, melt the chocolate chips and butter in a double boiler over low heat. Transfer to a small bowl for dipping.
  4. Insert a toothpick into each ball, then dip them into the chocolate mixture to coat about half of the ball. Transfer each ball back to the cookie sheet, chocolate side down, and to the fridge to set. Repeat until all of the peanut butter balls are gone.
  5. Chill in the fridge for 60-90 minutes, or until the chocolate sets.
