Buffalo Cheddar Cornbread Chili Pie

Traditional cornbread chili pie is kicked up a notch in this downright delicious version of the dish made with buffalo sauce and cheddar cheese!

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced red onion
  • 3 cloves garlic minced
  • 1 pound ground beef
  • 4 ounce can diced green chilies
  • 15 ounce can chili beans
  • ¾ cup buffalo sauce divided
  • 2 tablespoons chili seasoning
  • 2 8.5 ounce boxes dry corn muffin mix
  • 2 large eggs
  • ¾ cup milk
  • 1 cup cheddar cheese shredded

Instructions

  1. Preheat the oven to 400°F.
  2. Grease a 9 inch x 13 inch baking dish.
  3. Add the olive oil to a large skillet over medium heat.
  4. Add the red onion, cook for 3-4 minutes.
  5. Add the garlic and cook for an additional minute.
  6. Add the ground beef and cook 8-10 minutes, or until the ground beef is cooked through.
  7. Drain any grease from the skillet, then add the diced green chilies, chili beans, ½ cup buffalo sauce and chili seasoning.
  8. Simmer 5 minutes, then pour into the greased baking dish.
  9. In a large mixing bowl, combine the corn muffin mix, eggs, milk, ¼ cup buffalo sauce and cheddar cheese.
  10. Spread over the chili in the baking dish.
  11. Place in the oven uncovered and bake for 20-25 minutes.
