Egg Rolls
- 2 cups cooked chicken shredded
- 4 ounces cream cheese
- 1/2 cup blue cheese crumbled
- 1/4 cup buffalo wing sauce
- 1/4 cup green onions diced
- 1 package egg roll wrappers
For Serving
- blue cheese dressing
- ranch dressing
- Buffalo Sauce or Hot Sauce
- celery sticks
Instructions
- Shred the chicken if it is not already shredded. Then in a bowl combine Put the chicken, cream cheese, blue cheese, Buffalo wing sauce and green onions. Mix well.
- Put the egg roll wrappers, chicken filling and small bowl of water on a cutting board.
- Take one egg roll wrapper off and place it on the cutting board with the corner facing down, towards you.
- Put 1/4 cup of filling near the top corner of the egg roll wrapper and fold the top corner down over it.
- Roll it down, folding the left and right corners in as you go. Stop when only the bottom corner is left.
- Dip your fingers in the water and wet the bottom corner of the wrapper. Then roll the egg roll over it.
- Put the completed egg roll on a baking sheet and make the rest.
- Once all the filling is gone preheat the air fryer to 400 F for 3 minutes.
- While it preheats spray the egg rolls with oil or cooking spray so they brown nicely.
- Put the egg rolls in the air fryer basket, being sure to leave space for the air to circulate. You will probably have to cook them in 2-3 batches, depending on the size of your air fryer.
- Cook them at 400 F for 6-8 minutes, flipping them over with tongs halfway through.
- If they aren't golden brown enough after 8 minutes return them to the air fryer for another 2 minutes and check them again.
- Serve with ranch dressing, Buffalo wing sauce, or blue cheese dressing for dipping.

Notes
- No air fryer? Bake in a preheated conventional oven at 400F for 15-20 minutes, flipping once halfway through the cooking time.
- Use mild or hot wing sauce, depending on your taste preference.
- Preheat your air fryer for this recipe, it makes a difference.
- Don't over fill the egg rolls.
- Don't over fill the air fryer basket.
