Buffalo Chicken Grilled Cheese Recipe

This sandwich features shredded chicken tossed in buffalo sauce and blue cheese, layered with melted Monterey Jack cheese between buttered sourdough bread. Ingredients

  • ¼ cup butter room temperature (½ stick, unsalted
  • ¼ teaspoon garlic powder
  • ½ teaspoon parsley dried
  • 2 cups chicken cooked shredded
  • ½ cup buffalo sauce
  • ⅓ cup blue cheese crumbled
  • 4 lices sourdough bread cut approximately ½-inch thick
  • 2 cups Monterey jack cheese or swiss or mozzarella, shredded

Instructions

  1. In a small bowl, mix the butter, garlic powder and parsley, set aside.
  2. In a medium size bowl, mix the shredded chicken, buffalo sauce, and crumbled blue cheese.
  3. Spread one side of each piece of bread with the butter mixture, then turn over so the butter side is down.
  4. On two pieces of the bread, add ½ cup of shredded cheese, then top with the buffalo chicken mixture and the remaining shredded cheese.
  5. Place the remaining pieces of bread on top to close the sandwiches.
  6. Heat a large skillet over medium heat and place the sandwiches on the skillet. Cover with a lid and cook approximately 5 minutes until bottoms are lightly browned.
  7. Carefully flip the sandwiches and gently press to help seal them then cover with the lid and cook another 3-5 minutes until both sides are browned and cheese is melted.
  8. Remove from the skillet and serve with blue cheese dip or hot sauce.

Notes

  • Covering the skillet while cooking helps melt cheese and heat filling through without burning the bread.
  • Refrigerate leftovers in an airtight container and consume within 3 days for best quality.
  • Blue cheese can be omitted or replaced with extra shredded cheese if preferred.
  • This recipe scales easily to make more or fewer sandwiches.
