Buffalo Chicken Taquitos

Baked Buffalo Chicken Taquitos are a quick & easy recipe, great for dinner or a snack! They can be made with flour tortillas or corn tortillas for a gluten free taquito!

Ingredients

  • 2 tbsp olive oil divided
  • ½ cup red onion diced
  • 1 Jalapeño minced
  • 1 cup cooked, shredded chicken breast
  • ¼ cup buffalo sauce
  • 6 flour tortillas
  • ½ cup cheddar cheese shredded

Instructions

  1. Preheat the oven to 425°F.
  2. Heat 1 tbsp olive oil in a small skillet over medium heat.
  3. Add the onion and jalapeno, saute 3-4 minutes.
  4. Add the chicken and buffalo sauce to the skillet and toss everything together.
  5. Remove the skillet from the heat and set aside.
  6. Add 2 tablespoons of the chicken mixture over the bottom third of each tortilla, then top with a tablespoon of cheese and roll up tightly.
  7. Place each taquito seam side down on a baking sheet.
  8. Brush the remaining 1 tablespoon olive oil over the taquitos.
  9. Place in the oven and bake for 10-12 minutes.

Notes

  • Gluten Free Option: Use corn tortillas instead of flour tortillas. Microwave the tortillas for 15 seconds before preparing the taquitos to make the tortillas more pliable and less likely to rip.
