Bulgarian Stuffed Peppers (Palneni Chushki)

Palneni chushki is the Bulgarian version of the stuffed bell pepper recipe, a dish that is popular throughout Europe and other countries over the world.

Ingredients

  • 8 bell peppers , cored and seeded
  • 1 lb ground meat (beef, pork or a combination of both)
  • ⅔ cup rice
  • 2 onions , chopped
  • ½ bunch parsley , chopped
  • 3 tablespoons oil
  • 1 tablespoon dried savory
  • 1 tablespoon paprika
  • salt
  • black pepper
Serve with
  • 1 cup tomato puree

Instructions

  1. Preheat oven to 400F/200C.
  2. Heat the oil in a pan and sauté the onions for 2 to 3 minutes. Add the ground meat and cook for about 5 minutes.
  3. Add the rice and season with salt, pepper, parsley, savory and paprika. Add ½ cup (100ml) of hot water and cook for another 5 minutes, or until the water is absorbed. Take off the heat.
  4. Stuff each bell pepper with the mixture using a spoon. Place the peppers in a deep ovenproof baking dish, and top up with hot water to fill the dish at half level.
  5. Cover with foil or baking dish cover and cook for about 45 minutes in the oven.
  6. Uncover and cook for another 10 minutes until the peppers are cooked.
  7. Serve with tomato sauce or yogurt sauce (yogurt, flour, egg mixture).
