Bulgarian Stuffed Peppers (Palneni Chushki)

Ingredients
- 8 bell peppers , cored and seeded
- 1 lb ground meat (beef, pork or a combination of both)
- ⅔ cup rice
- 2 onions , chopped
- ½ bunch parsley , chopped
- 3 tablespoons oil
- 1 tablespoon dried savory
- 1 tablespoon paprika
- salt
- black pepper
Serve with
- 1 cup tomato puree
Instructions
- Preheat oven to 400F/200C.
- Heat the oil in a pan and sauté the onions for 2 to 3 minutes. Add the ground meat and cook for about 5 minutes.
- Add the rice and season with salt, pepper, parsley, savory and paprika. Add ½ cup (100ml) of hot water and cook for another 5 minutes, or until the water is absorbed. Take off the heat.
- Stuff each bell pepper with the mixture using a spoon. Place the peppers in a deep ovenproof baking dish, and top up with hot water to fill the dish at half level.
- Cover with foil or baking dish cover and cook for about 45 minutes in the oven.
- Uncover and cook for another 10 minutes until the peppers are cooked.
- Serve with tomato sauce or yogurt sauce (yogurt, flour, egg mixture).
