Burrata Salad

Burrata Salad features creamy burrata cheese served atop a vibrant mix of arugula, thinly sliced red onion, cherry tomatoes, and fresh peach slices. Ingredients

For the dressing:
  • 1/2 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 2 teaspoons Dijon mustard or more to taste (see note 1)
  • 1 teaspoon honey
  • black pepper see note 2, freshly ground, to taste
  • salt see note 2, freshly ground, to taste
For the salad:
  • 3 cups arugula
  • 1 small red onion thinly sliced
  • 1 pint cherry tomato halved
  • 1 peach sliced
  • 1 (8-ounce) container burrata cheese drained (see note 3

Instructions

  1. In a small jar with a tight-fitting lid, or in a bowl with a whisk, add olive oil, white balsamic vinegar, mustard, honey, and salt and pepper to taste. (I like 1/2 teaspoon salt and 1/4 teaspoon pepper.) Shake or whisk to combine.
  2. In a large bowl, add the arugula, red onion, tomatoes, and peaches. Drizzle dressing over salad and toss to combine. Top with burrata and serve.

Notes

  • Dijon mustard can be adjusted in quantity; spicy brown mustard is a viable substitute for similar flavor depth.
  • Season dressing by tasting before adding salt; typically use about half the salt amount in freshly ground black pepper for balanced seasoning.
  • Burrata is a creamy cheese with a mozzarella shell; if unavailable, fresh buffalo milk mozzarella can substitute.
  • Make dressing up to 3 days in advance and shake or whisk before using.
  • Salad makes four servings; best served immediately after assembling to maintain burrata texture.
