Burrata Tomato and Avocado Salad

This delightful salad combines creamy burrata with juicy fresh tomatoes and buttery avocado drizzled with some rich olive oil, fresh basil, vinegar, salt, and pepper. Perfect for summertime!

Ingredients

  • 6 medium Campari tomatoes quartered
  • ½ avocado pitted and sliced
  • ¼ cup slivered red onion
  • 3 balls burrata drained
  • torn fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon champagne vinegar or rice vinegar
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Place sliced tomatoes, avocado, and slivered onion on a plate or divide between two bowls.
  2. Drain the water from the burrata balls and gently break them in half before plating them with the veggies. Sprinkle it all with torn basil leaves and drizzle with olive oil and vinegar.
  3. Add sea and freshly cracked black pepper to taste. The olive oil is really the key and main flavor so add more to taste and make sure its good and fruity to complement the freshness of the other ingredients.
