Ingredients
- 2 cups all purpose flour 220 grams
- 1/2 cup brown sugar 100 grams
- 1/2 cup white sugar 100 grams
- 1/2 Teaspoon vanilla extract 3 grams
- 1 large egg 50 grams
- 4 tablespoons cup butter 60 grams
- 4 tablespoons shortening 60 grams
- 1 teaspoon cream of tartar 3 grams
- 1 teaspoon baking soda 4 grams
Instructions
- Preheat oven to 350°F (175°C), and line a baking sheets with parchment paper.
- Shift the flour, baking soda, cream of tartar, and salt into a bowl. Set aside.
- In a separate bowl, beat the butter, sugar, shortening and vanilla with a hand mixer or stand mixer until light and fluffy.
- Add the egg and beat to combine, then add the flour mixture and mix just until the cookie dough id developed.
- Using a tablespoon, spoon one cookie dough into balls and place onto lined baking tray. Separte them about 1 1/2 inch apart.
- Slight flatten each cookie, create an indentations in the center and fill with fruit jam.
- Place tray into the oven and bake the cookies for 10- 12 min or until golden.
