Ingredients

  • 1 pound mushrooms white or cremini, wiped clean and sliced
  • ¼ cup butter unsalted
  • 1 tablespoon garlic minced, fresh
  • ½ teaspoon kosher salt Or ¼ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
  • ¼ teaspoon black pepper freshly ground
  • ½ teaspoon thyme dried
  • 2 tablespoons parsley chopped, for garnish

Instructions

  1. In a large skillet, heat the butter over medium heat.
  2. When the foaming subsides, add the sliced mushrooms, minced garlic, kosher salt, black pepper, and dried thyme. 
  3. Cook, stirring often, over medium heat, until the mushrooms are tender and the liquids they release have evaporated, for about 7 minutes. 
  4. Garnish the mushrooms with chopped parsley. Serve immediately. 

Notes

  • Use plenty of butter and cook mushrooms patiently over medium heat for best flavor and tenderness.
  • Clean mushrooms by wiping with damp paper towels; avoid soaking to prevent excess moisture.
  • Store leftovers in an airtight container in the fridge for 3 to 4 days; flavor improves after a day or two.
  • Reheat covered in the microwave at 50% power to maintain moisture and texture.
  • Mushrooms freeze well for up to three months; thaw overnight in the fridge before reheating.
