Ingredients
- 1 large (or 2 small) Cosmic Crisp apples, cut into matchsticks (about a heaping cup)
- 1 cup coarsely grated old white cheddar
- 1/2 cup chopped almonds, toasted
- 1 small raddichio lettuce, chopped thinly
- 1 head butter lettuce, torn into pieces
- 1/2 cup Thinly sliced red onion
Lemon Dressing
- 1/2 cup olive oil
- 1 tsp salt
- 1/2 tsp pepper
- juice of 1 large lemon
- 1/2 tbsp red wine vinegar
- 2 garlic cloves, pressed
- 1 tsp Dijon mustard
Instructions
- Toast the almonds over medium heat in a small frying pan until fragrant and starting to turn golden brown.
- Add all ingredients to a large platter or bowl. Drizzle with dressing, toss and serve.
