Buttered Mixed Vegetables

Ingredients

  • 15 ounces mixed vegetables frozen
  • 2/3 cup vegetable broth
  • 1/4 cup butter unsalted
  • 1 1/2 teaspoons garlic minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper ground
  • parsley for garnish, fresh

Instructions

  1. Add the vegetables and broth to a large skillet set over medium heat, brining it to a low boil. Simmer for 5 to 10 minutes, stirring frequently, until heated through. Drain the vegetables in a fine mesh sieve.
  2. Return the pan to the heat and melt the butter. Stir in the garlic and saute for about 1 minute, until fragrant.
  3. Add the drained vegetables and stir well to coat, sautéing for 2 to 3 minutes, until warmed through. Season with salt and pepper, to taste, then transfer the vegetables to a serving dish. Garnish with chopped fresh parsley, if desired.

Notes

  • STORAGE: Store leftovers in a sealed container in the refrigerator for up to 3 days. Reheat in the microwave or in a skillet until heated through.
