Ingredients

  • 2 pounds red potatoes scrubbed and cut into large chunks
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 4 tablespoons butter
  • salt and pepper

Instructions

  1. Add potatoes to a large stockpot and add enough water to cover completely. Add olive oil and salt to season the water. Bring potatoes to a boil over medium heat and allow to boil until the potatoes are fork tender, about 15 minutes.
  2. Remove from heat and drain off water. Add butter, along with salt and pepper and stir until well-combined.
  3. Serve warm.
