Butternut Squash & Apple Soup

Butternut Squash & Apple Soup is a great belly warmer, and super easy to make!

Ingredients

  • 3 cups butternut squash peeled and cut into cubes (see note for how to make this easy)
  • 4 cups vegetable stock
  • 1 cup onion diced
  • 1 cup apple peeled, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked pepper
  • 1 pinch nutmeg

Instructions

    Cup of Yum
  1. Add all ingredients to a large pot, or dutch oven. 
  2. Bring to a boil and simmer for 15 to 20 minutes, or until the squash is tender.
  3. Using an immersion blender, puree the soup.
  4. Taste for seasoning, and adjust if necessary.
  5. Devour.
