Butternut Squash Cake

Ingredients

  • 1 cup vegetable oil
  • 1 cup sugar
  • 1 cup brown sugar
  • 4 eggs
  • 2 cups flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 ½ tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • 3 jars butternut squash baby food
  • 1 ½ cups pecans optional
  • Cream Cheese frosting

Instructions

  1. Pre-heat the oven to 350 degrees
  2. Blend oil and sugar. Then add the eggs and whisk together until blended.
  3. Add in all the dry ingredients and whisk. Now add the butternut squash baby food and blend.
  4. Pour the cake mixture into 2 greased 9 inch round baking pans.
  5. Bake for 1 hour and check the cake at 45 minutes using a toothpick in the center. Some ovens vary.
  6. Frosting the cake with cream cheese frosting.
