Butternut Squash Soup with Star Anise {Vegan, GF}

This Butternut Squash Soup features roasted butternut squash simmered with star anise and vegetables in vegetable stock for a smooth, fragrant, vegan, and gluten-free meal. Ingredients

  • 1 tbsp coconut oil
  • 1 onion finely sliced, large
  • 2 garlic minced, clove
  • 4 star anise
  • 1 butternut squash deseed and roughly chopped, large, peeled
  • 2 carrot roughly chopped
  • 1 litre (4 cups) vegetable stock or chicken stock if not vegetarian, hot
  • salt
  • black pepper ground

Instructions

  1. Heat the oil in a frying pan on medium heat
  2. add in the onions and fry for about 10 mins until softened, then add in the garlic, star anise and butternut squash to the bowl and fry 2 mins.
  3. Add the stock, season to taste, mix well, cover and simmer for 30 mins until the butternut squash is cooked through
  4. Let the soup cool down and remove the star anise before blending it to your desired smoothness.
  5. Serve warm
