Ingredients

  • 2 tablespoons butter unsalted
  • 1/2 cup onion , chopped
  • 4 cloves garlic , minced
  • 1 cup quinoa , rinsed well, and drained
  • 2 cups chicken broth
  • 1/2 teaspoon salt

Instructions

  1. Add butter to a medium saucepan on medium heat.
  2. Add onion, cooking for 5-6 minutes until onions are translucent.
  3. Add in garlic, stir and cook for 30 seconds.
  4. Add quinoa, chicken broth, and salt, stir well.
  5. Bring to a boil, then reduce to a simmer.
  6. Cook, covered, for 15-18 minutes until broth is absorbed.
  7. Fluff with a fork before serving.
