Buttery Herb Boiled Potatoes
These boiled potatoes are tossed with butter and herbs for a quick and flavorful side dish, ready in under 30 minutes.
Ingredients
- 2-3 pounds yellow baby potato
- 4 tablespoons butter
- 1 tablespoons parsley chopped, fresh
- 1 tablespoons chive minced
- 1 teaspoon rosemary minced fresh
- 1 teaspoon thyme minced fresh
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Meanwhile, wash the baby potatoes. If they are larger, slice them in half; if they are bite-sized, leave them whole.
- Add the potatoes to the boiling water and cook until they are fork-tender, about 14–18 minutes.
- Drain the potatoes and transfer them to a large mixing bowl. Immediately add the melted butter, parsley, chives, rosemary, thyme, salt, and black pepper. Toss until the potatoes are evenly coated.
- Taste and add additional salt if needed. Serve warm and enjoy!
